Power Packed Popcorn Cookies

What you need:
* 1 tsp. vanilla extract
* 1 egg
* 3 c. popped popcorn
* 2 tsp. baking powder
* 1 stick (1/2 c.) butter, softened
* 1/4 c. whole wheat or all-purpose flour
* 1 c. raisins, dried cranberries or other dried fruit, chopped
* 1/2 c. sunflower seeds or chopped nuts, optional
* 1/2 tsp. baking soda
* 1/2 tsp. salt
* 1/2 c. oatmeal
* 1/2 c. flaked coconut
* 1 c. brown sugar
* 1 c. toasted wheat germ
What to do:
1. Preheat oven to 350°F. Lightly spray baking sheets with cooking spray and set aside.
2. In a small bowl, stir together flour, baking powder, soda and salt; set aside.
3. Cream butter and sugar together and add egg and vanilla; mix well. Stir in flour mixture and wheat germ and oatmeal until well blended. Add coconut, popcorn, raisins and sunflower seeds, if desired, and mix until well blended.
4. Drop by rounded teaspoons onto baking sheet, allowing 2 inches between cookies to allow for spreading.
5. Bake 7-8 min. or until edges are lightly browned. Allow cookies to cool on pan 5 min. before removing to racks to cool completely.

Yield: 4 dozen cookies
